  1. Wash the cucumbers under a running tap.
  2. Place two chopsticks one on each side of a cucumber, then cut through the cucumber diagonally leaving 2mm between each cut. The chopsticks will prevent you from cutting all the way through.
  3. Flip the cucumber over, so that the unsliced surface is facing toward you, and position the chopsticks as before.
  4. Next, slice the unsliced surface vertically between the cuts on the other side.
  5. Now you should have a spiral! Place all sliced cucumber spirals into a bowl.
  6. In a separate bowl, add the remaining ingredients and mix until combined before pouring over the sliced cucumber.
  7. Place in fridge to marinate cucumber overnight (or at least 4 hours), flipping half way through to ensure the marinade works all over.
  8. Serve as a refreshing side dish to your main meal. Also works as an appetiser sprinkled with toasted peanuts.
