For the vegetarians amongst us though, getting a rich broth without the traditional bone stock can be very tricky! Soy sauce based ramen broths are lacking body, so we set about creating the BEST vegan ramen broth that is rich and thick and hearty. Of course, central to the recipe is a blend of our organic miso pastes. So whether you are vegetarian, vegan or simply wanting a lighter and quick-to-make noodle broth, this is the recipe for you! Here's a recipe you will use again and again for all your noodle soups.

Instructions

  1. First, Boil the noodles according to packet instructions until your noodles are tender and plump.
  2. Drain and rinse the noodle in water to cool and wash off some of the starch.
  3. In a pan, warm up 300ml of oat milk on a low heat.
  4. Meanwhile, in a small bowl, mix together the 2 miso pastes and the sesame oil until you get a smooth paste.
  5. When the oat milk is bubbling hot, switch off the heat and stir in the miso paste until completely smooth and dissolved.
  6. Refresh the noodles by adding it back to the pan for 2 minutes of medium heat, along with your toppings such as tofu, and sweetcorn,
  7. Serve in a wide rimmed bowl, the noodles and soup first and then toppings.
  8. Garnish with a little spring onion and sesame seed. Slurp up!

Notes

The strength of your miso broth is very much down to taste, (we love ours rich and strong!) so taste the ramen broth and if you find it too strong, simply add 50ml of hot water or oat milk to balance.
