The BEST Vegan Ramen Broth
This miso ramen recipe is the best noodle broth ever; it is rich, creamy and balanced, you will want to slurp the whole bowl! Vegan, vegetarian, and low in fat, this is our ultimate vegan ramen broth made from a blend of miso pastes from Miso Tasty, and toasted sesame oil and creamy oat milk. By not boiling the miso, you will retain the depth of flavour and nutritious benefits of the miso too. In the northern regions of Japan, miso ramen is more popular than the pork broth and is often topped with sweetcorn and chives. Enjoy with toppings of sweetcorn, kimchi and tofu for a nutrient-rich bowl of soul food.

Instructions
- First, Boil the noodles according to packet instructions until your noodles are tender and plump.
- Drain and rinse the noodle in water to cool and wash off some of the starch.
- In a pan, warm up 300ml of oat milk on a low heat.
- Meanwhile, in a small bowl, mix together the 2 miso pastes and the sesame oil until you get a smooth paste.
- When the oat milk is bubbling hot, switch off the heat and stir in the miso paste until completely smooth and dissolved.
- Refresh the noodles by adding it back to the pan for 2 minutes of medium heat, along with your toppings such as tofu, and sweetcorn,
- Serve in a wide rimmed bowl, the noodles and soup first and then toppings.
- Garnish with a little spring onion and sesame seed. Slurp up!
Notes
The strength of your miso broth is very much down to taste, (we love ours rich and strong!) so taste the ramen broth and if you find it too strong, simply add 50ml of hot water or oat milk to balance.
