Matcha Cake with Miso Crème Fraîche & Fresh Fruit Recipe

This matcha cake with miso creme fraîche is perfect for a light sweet dessert. The whipped miso creme fraîche adds a touch of luxury to this simple afternoon loaf cake.

For the miso crème fraîche
  1. In a small bowl, mix together the miso paste, sugar and 1 tbsp of the crème fraîche to form a smooth paste.
  2. In a large bowl, whip the remaining creme fraîche, until peaks form.
  3. Gently fold in the sweet miso paste until mixed in.
  4. Cover and refrigerate for 30 minutes before serving.
Matcha Cake Recipe:
  1. Preheat the oven to 170ºC, fan.
  2. Beat the egg whites until foamy.
  3. Add 1/3rd of the sugar and beat until firm peaks.
  4. Now take the egg yolks and add the remaining sugar, salt, water and vanilla and beat until fluffy and pale.
  5. Add half the egg whites and fold gently.
  6. Sift the flour and matcha, and baking powder into the egg yolk mixture, a small amount at a time.
  7. Add the oil by mixing in with a small amount of the batter in a small bowl, before adding it back in with the rest of the batter.
  8. Add the other half of the egg whites and fold to complete the batter.
  9. Place the cake batter inside a lined tin and bang it twice on the counter before baking for 30 minutes until a skewer comes out clean.
  10. Cool before slicing and serve with miso crème fraîche and some fresh fruit.
