Savoury Miso Porridge with Garlicky Veggies, Egg & Pickles
This is inspired by the Asian equivalent of porridge - Congee. With a mild savoury base and topped with sharp and flavoursome toppings, this is a flavour packed breakfast bowl, that could be enjoyed throughout the day.
You can get really creative with your toppings. An egg is essential but rest can be adapted to whatever you have available. Pickles can be shop bought to save on prep time too.

- For the soft boiled egg, bring a medium saucepan of water to the boil and cook for 6 minutes, before lifting out into iced water to cool.
- For the quick pickles, salt the cucumber ribbons for 15 minutes to draw all the water out, before then combining with the carrots, sugar, vinegar and coriander seeds in a bowl. Let sit for at least 30 minutes before serving.
- For the garlicky miso mushroom leek topping, in a large frying pan, warm up the olive oil and fry the garlic on a medium heat for 1 minute before adding the mushrooms and leeks and cook until softened
- In a small bowl mix together the butter and miso paste and add to the pan, allowing it to melt and mingle into the vegetables.
- Slice the spring onions and chilli diagonally.
- To make the porridge, simply warm up the milk and water before adding the oats to the pan and cook on a simmer for 5-10 minutes or according to packet instructions.
- Once the porridge is cooked through, switch off the heat.
- Mix the miso paste with 1 tablespoon of water and stir into the porridge, taking care that there are no lumps.
- Add a pinch of white pepper to the porridge and mix.
- Finally, bring the dish together, with a bowl of porridge as a base, add the garlicky miso vegetables, soft boiled egg, pickles and chilli oil (optional) and sesame seeds (optional) before serving.
Notes
This is the sort of recipe where you prepare the toppings first, so that the porridge can be enjoyed as soon as it is cooked through.
