This is a comforting ramen topping, cosy and easy like nursery food. Add some sweetcorn for some crunch, if you fancy it!

  1. In a small bowl, make the miso butter by whipping together the miso and the butter until totally combined and no lumps.
  2. In a frying pan, melt the miso butter until it starts to bubble then toss in the mushrooms, which will start to caramelise and coat in the sauce. Then take off the heat.
  3. In a smaller saucepan, boil water to cook the egg for 5.5 minutes for a soft runny yolk.
  4. Meanwhile in a large sauce pan, cook the ramen noodles according to the packet instructions.
  5. When the egg is done, plunge it into cold water.
  6. Finish the ramen noodles according to the packet instructions and add the mushroom toppings.
  7. Peel the soft boiled egg, slice it in half lengthways to reveal the runny yolk inside and place on top of your noodles.
  8. Garnish with extra spring onions and sweetcorn for extra colour and crunch.
  9. Enjoy!

Notes

These umami-rich miso mushrooms can be stirred into pasta or noodles too.


The whipped tofu is savoury and creamy without being heavy. A great natural vegan alternative to ricotta.
