Vegan Curried Coronation Tofu Sandwiches Recipe
My Vegan Curried Coronation Tofu is delicious in sandwiches for picnics or pack lunches but also great to top salads and baked potatoes. Firm tofu pieces are coddled in a thick sauce, surrounded by raisins, mango and sweet curry flavours.
Add the dried fruits and the grated ginger and mix again.
70 g Dried apricots, 1 thumb Fresh ginger, 40 g Golden raisins
Carefully fold in the tofu, being careful not to mix too hard, which would break up the pieces.
300 g Block of firm tofu
Add the coriander and season with the salt and pepper.
1 handful Coriander, 1/2 tsp Sea salt flakes, 1 pinch Freshly ground black pepper
Next make your sandwiches, cut in half being careful not to squash out the filling and serve.
12 slices bread
