Vegan Curried Coronation Tofu Sandwiches Recipe

I love a creamy sandwich filling: Marie Rose sauce, coleslaw; egg mayo… and this one, is a vegan version of classic Coronation chicken. Firm tofu pieces are coddled in a thick sauce, surrounded by raisins, mango and sweet curry flavours; it is a delightful new arrival in my life.

Vegan Curried Coronation Tofu Sandwiches Recipe

My Vegan Curried Coronation Tofu is delicious in sandwiches for picnics or pack lunches but also great to top salads and baked potatoes. Firm tofu pieces are coddled in a thick sauce, surrounded by raisins, mango and sweet curry flavours.

Ingredients
  

  • 150 ml Vegan mayonnaise (I like Lucy’s Mayo, or Hellman’s)
  • 150 ml Soy yoghurt or Greek yogurt
  • 2 tsp Balsamic vingegar
  • 2 tbsp Medium curry powder
  • 3 tbsp Mango chutney
  • 70 g Dried apricots finely chopped
  • 40 g Golden raisins the bigger the better
  • 1 thumb Fresh ginger peeled and grated
  • 300 g Block of firm tofu drained for 20 minutes and chopped into 1cm cubes
  • 1 handful Coriander chopped
  • 1/2 tsp Sea salt flakes
  • 1 pinch Freshly ground black pepper
  • 12 slices bread

Instructions
 

  • In a large mixing bowl, simply mix together the mayonnaise and yogurt until combined.
    150 ml Vegan mayonnaise, 150 ml Soy yoghurt
  • Add the vinegar, curry powder and mango chutney and mix thoroughly.
    2 tsp Balsamic vingegar, 2 tbsp Medium curry powder, 3 tbsp Mango chutney
  • Add the dried fruits and the grated ginger and mix again.
    70 g Dried apricots, 1 thumb Fresh ginger, 40 g Golden raisins
  • Carefully fold in the tofu, being careful not to mix too hard, which would break up the pieces.
    300 g Block of firm tofu
  • Add the coriander and season with the salt and pepper.
    1 handful Coriander, 1/2 tsp Sea salt flakes, 1 pinch Freshly ground black pepper
  • Next make your sandwiches, cut in half being careful not to squash out the filling and serve.
    12 slices bread

Twists

Adding some finely chopped walnuts or celery brings extra crunch and texture.
