A combination of chewy and crunchy textures from the soba noodles and green beans with the creamy, naturally nutty and smooth flavours of the dressing! Yum!

Instructions

  1. Simply steam or grill the green beans in one saucepan,
  2. Boil and drain the soba noodles in a deep pan according to packet instructions.
  3. In a mixing bowl, combine all the dressing ingredients until smooth, and simply toss in with the noodles and green beans until all combined. Sprinkle with some chopped chives and sesame seeds before serving.

Notes

These umami-rich miso mushrooms can be stirred into pasta or noodles too.


The whipped tofu is savoury and creamy without being heavy. A great natural vegan alternative to ricotta.
