Miso is the ultimate umami flavour booster, and the humble cheese and beans on toast is about to have a miso makeover. By adding miso to both the cheese and the tomato elements of this dish, you get big flavours fast. It is time to elevate your comfort food staple, the Miso Tasty way.

  1. In a wide frying pan, add 1 tbsp olive oil and on medium heat, cook the onions until softened.
  2. Next add the tomatoes and allow to bubble for 2 minutes to reduce the sauce
  3. In a small bowl, mix together the Red Miso Paste, Worcestershire sauce and harissa until one smooth paste, then add to the pan. Allow to simmer for 2-3 minutes for the flavours to mingle before taking off the heat.
  4. Grate the cheese on a chunky setting and place in a medium sized bowl
  5. In a small bowl, mix the White Miso Paste with the water to create a smooth paste, then mix it into the cheese and add the fresh thyme - don’t worry if it is a little lumpy as it clings to the cheese.
  6. Pop the sourdough bread in the toaster, and pre heat the grill.
  7. Warm up the beans again and as soon as the toast is ready, pour the tomato beans onto the toast carefully, followed by a couple of tablespoons of the cheese/ miso/ herb sauce on top.
  8. Place both pieces of loaded toast on a rack that can be placed under the grill. Add a few extra drops of Worcestershire sauce on top and grill for 1 minute until golden and bubbly. Enjoy immediately!
