Aubergine and Halloumi Skewers Recipe featuring Sweet & Savoury Miso Glaze

The Sweet & Savoury Miso Glaze is a classic miso marinade for all fish and chicken dishes, and for making the famous Miso glazed Aubergine and Miso Cod, which are both quintessential Japanese dishes.

Golden yellow in colour with a glossy finish, expect sweet and savoury notes, caramel tones and sweet soy sauce flavours. The sweetness of this sauce will cut through the savoury and richness of chicken and fish, caramelising beautifully on cooking. As it is quite a sweet sauce, we recommend not cooking on too high a heat for too long.

Try mixing with olive oil to make an easy salad dressing, or create a delicious dipping sauce to bring sweetness, glossy shine and an extra umami kick. You can even enjoy as a dip for crudites or to coat vegetables for roasting such as carrots, butternut squash and green beans.

  1. Preheat the oven to 220°C / 200°C fan, or light your BBQ if using. Soak your small wooden skewers in some water for 30 minutes before cooking to avoid burning.
  2. Slice the halloumi in half and cut into 2cm cubes. Cut the aubergines into four thick slices lengthways and then dice into 2cm cubes. Place in a medium bowl, drizzle with the olive oil and salt, then mix well to coat. Layer around 4-6 pieces per skewer, alternating the aubergines and halloumi. You should end up with 25-30 skewers in total.
  3. Roast the skewers in the oven or grill on the BBQ for 6-7 minutes until lightly charred. Brush with the Sweet & Savoury Glaze, sprinkle with white sesame seeds, then place them back in the oven or onto the BBQ for a further 3-4 minutes until nicely caramelised.
  4. Remove from the oven or BBQ and scatter over sliced spring onions, extra sesame seeds and mint leaves. Enjoy alongside a crisp green salad and a nice cold beer.
