Miso Fillet O’ Fish
Fillet o' fishes can be a bit marmite, but we love them. In this version, we've dunked the cod in White Miso for extra umami depth, and coated them in panko and sesame for a moreish crunch. All of that is slathered with the most moreish green chilli mayo and sandwiched between two brioche buns. You'll want to give this one a go.

Instructions
- Pat the cod fillets dry with paper towels. Make a miso brine by mixing 2 tbsp white miso with 3 tbsp water. Mix the panko and sesame seeds together. Coat the fish by dipping each piece in the white miso brine then dredge the fish in flour, then beaten egg, and finally coat with the mixture of panko breadcrumbs and sesame seeds. Set your oven to 200°C .
- Lightly spray the coated fillets with oil. Bake in the oven for 15 minutes, turning once halfway and spraying again with oil if needed. If using an air fryer, cook at 200°C for 10–12 minutes, flipping halfway through. Spray again lightly after turning for extra crispiness.
- Combine all chilli mayo ingredients in a bowl and mix well. Adjust seasoning to taste.
- Toast the burger buns in a dry pan or under a grill.
- Assemble the burgers. Spread chilli mayo on the bottom bun then top with the shredded lettuce, then the crispy miso cod fillet. Spoon on a little more chilli mayo, top with a slice of cheese if you like and then close with the top of the bun.
