This is an easy warming dish which I knocked up for a quick team lunch or a family meal.

Ingredients

Instructions

  1. Shallow fry on all sides of cubes aubergines in olive oil for several minutes until half cooked through, then removed from the pan.
  2. In a separate jug, mix together 4 tablespoons red miso paste, 4 tablespoons sugar, and 355ml water.
  3. Add the miso mixture into the pan with slices of ginger. Simmer the broth till hot.
  4. Place the half cooked aubergines into the broth and cook for a further 5-10 minutes on a low-heat until soft. The miso sauce will thicken up so keep an eye not to burn it.
  5. Garnish with fresh herbs like coriander or chives before serving with rice.
  6. Grab bowls and eat whilst nice and hot!

Notes

If you like it spicy, you can add a chilli to your taste, in the miso broth while cooking the aubergines. This will give you extra heat to your dish.
