Fresh Tofu is easy to handle and can be cut into slices or cubes simply with a sharp knife and a chopping board. Drained and pressed tofu is much easier to cut; the firmer texture supports a cleaner cut. Many stir-fried and pan-fried dishes call for cubes of tofu, and cutting to 1.5cm-2cm thickness is ideal. Make sure you have a very sharp knife! The trick for cutting neat, uniform pieces is to cut the whole block in half and keep halving the pieces until you have the desired size for your dish.
