This is an easy warming dish which I knocked up for a quick team lunch this month.
Cut 2 aubergines into cubes and shallow fry on all sides in olive oil for several minutes until half cooked through, then removed from the pan.
In a separate bowl, mix together 4 tablespoons of red miso paste, 4 tablespoons of sugar, 1.5 cups of water and simmer in a pan with a few slices of ginger.
Once hot, add the aubergines, and cook for a further 5-10 minutes on a low-heat until soft. The miso sauce will thicken up so take care.
Garnish with fresh herbs like coriander or chives before serving with rice.
Grab bowls and eat whilst nice and hot!
