Soba noodles are made from buckwheat, which means they are naturally gluten free (although there are versions of soba noodles made from a combination of buckwheat and wheat flours) and when cooked al-dente are a perfect complement to this Miso Sesame Tahini Dressing. A combination of chewy and crunchy textures from the soba noodles and green beans with the creamy, naturally nutty and smooth flavours of the dressing! Yum!

Ingredients 

  • 150g of dried soba noodles
  • Handful of fresh green beans
  • Sprinkle of freshly snipped  chives
For the Dressing 
  • 200ml of tahini
  • 2 tbsp of white miso paste
  • 200ml of water
  • Pinch of black pepper
  • 1 tsp of soy sauce
Method:
Simply steam or grill the green beans in one saucepan, and boil and drain the Soba noodles in another pan according to packet instructions.
In a mixing bowl, combine all the dressing ingredients until smooth, and simply toss in with the noodles and green beans until all combined. Sprinkle with some chopped chives and sesame seeds before serving.
