Glass noodles are called Harusame noodles in Japan, which translates literally to “spring rain” due to their light and glossy appearance. Miso Tasty’s Glass Noodle Kits create super light and tasty noodle soups that are packed full of flavour and health benefits!

Chicken, asparagus and tomato topping: 

– Handful of asparagus
– Handful of chopped tomatoes
– Handful of leftover chicken
– Handful of spring onions, chopped length ways

Cover 2 noodle nests in boiling water for 6 minutes until soft and plump. Drain and place in large bowl. In a pan, empty 1x sachet miso paste, seaweed and onion garnishes and 200ml boiling water. Stir. Add toppings and cook on medium heat until cooked through. Pour soup and toppings over noodles, add spring onions and enjoy!

Twist: why not add a squeeze of lemon juice for a refreshing tang!
