As the winter draws in, I have been cooking even more than usual! Hearty soups, curries and spicy stews have been served up at the Miso Tasty office and at home,  to nourish and keep us warm and cosy.

This month, we are super excited to announce the launch of A BRAND NEW PRODUCT!!! THE KATSU CURRY KIT! It’s been over a year in the making, and in our opinion, is the ULTIMATE comfort food! Now you can make it in under 30 minutes with our easy to use kit.  We also launched into SAINSBURY’s supermarkets which is an amazing milestone for Miso Tasty.

This issue is all about comforting recipes, we have a Sweet Potato Katsu Curry, a Spicy Stewed Aubergine, and a Miso Mash! I hope you like them, and don’t forget to share with us your creations!

Miso Tasty Now available at Sainsbury's

Who doesn’t love a mash potato! To add a deep savoury flavour without adding heaps of salt, simply stir in some of our Miso Tasty white miso paste. I love adding some fresh chives to add freshness and colour too.

Simply boil 2 large floury potatoes like Maris Pipers or King Edwards, and mash together with 2 tablespoons of Miso Tasty white miso paste, 1 tablespoon of unsalted butter and a crack of black pepper.

Miso Tasty's Spicy Stewed Miso Aubergines

This is an easy warming dish which I knocked up for a quick team lunch this month.

Serves 4: 
Cut 2 aubergines into cubes and shallow fry on all sides in olive oil for several minutes until half cooked through, then removed from the pan.

In a separate bowl, mix together 4 tablespoons of red miso paste, 4 tablespoons of sugar, 1.5 cups of water and simmer in a pan with a few slices of ginger.

Once hot, add the aubergines, and cook for a further 5-10 minutes on a low-heat until soft. The miso sauce will thicken up so take care.

Garnish with fresh herbs like coriander or chives before serving with rice. Grab bowls and eat whilst nice and hot!
