Chicken wings are a common cheeky snack in Japan, especially marinated & grilled on sticks yakitori-style over hot coals. Many yakitori places are open late & well into the night!Grill them in the oven or on the barbecue and enjoy with a crunchy salad & a cold beer.
Serves 4 as a starter
2 tbsp olive oil
1 tbsp sake
12 chicken wings, cleaned
5 tbsp red miso
2 tbsp runny honey
1 tbsp mirin
1 tsp peeled & freshly grated root ginger
1 garlic clove, finely grated.
Rub the olive oil and sake intothe chicken and leave for at least 30mins or even overnight. Meanwhile, in a bowl, stir together the miso, honey and mirin until smooth, then add the ginger & the garlic. Add the chicken to the miso marinade and using your hands rub the marinade into the chicken. Cover with cling film & leave in the refrigerator for at least 2-3 hours, or overnight.
When you’re ready to cook, preheat the oven to 180C/350F/gas mark 4.
Take the chicken out of the marinade, keeping enough marinade on to bring flavour but not so much that it could burn. If cooking on a barbecue, use skewers so the wings are easier to turn.
Bake for 15 minutes, before transferring to a hot preheated grill. Grill for 4-6 minutes on each side until cooked through & the skin is dark & caramelised in spots.
