Miso Ginger & Onion Oil Ramen With Broccoli Recipe

This Miso Ginger & Onion Oil Ramen With Broccoli Recipe is a really quick, working from home lunch which you can whip up in minutes.

The recipe below includes the recipe for Ginger & Onion Oil which we really recommend having on stand by for lots of other dishes. The recipe makes more than enough for this dish, just keep the rest in the fridge ready for times when you want to cook something up quickly.  It goes perfectly with noodles as well as with rice or as a dip with poached chicken.

Miso Ginger & Onion Oil Ramen With Broccoli is a nice reinterpretation of the Japanese ramen into more of a Chinese sort of style of noodle stir fry and it is just as yummy if you swap the broccoli with other ingredients as well.

Ingredients (Serves 2)

  • 1 Ramen Noodle Kit
  • 1 head of broccoli, chopped into bite sized pieces
  • 1 clove of garlic, roughly chopped
  • Ginger & Onion Oil

Ginger & Onion Oil Recipe

  • 1 root ginger, roughly 60g, peeled
  • 120g spring onions, washed with ends cut off
  • 240ml olive oil or sunflower oil
  • Salt

Method

To make the Ginger & Onion Oil, first blitz the ginger and spring onions in a blender. Transfer the mixture into a pot or a sealable container then drench in the oil. Add a pinch of salt to taste and finally leave overnight in the fridge.

In a pot of boiling water, add both the ramen noodle nests and cook for 6mins

Meanwhile in a pre-heated pan with a drizzle of oil, carefully add the broccoli then the garlic and gently fry for a few minutes until it starts to char, then add 50ml of water and cover for 2 minutes to steam cook, before a final minute in the pan uncovered, then remove from the pan.

Once, the noodles are cooked, drain the water away then add them to the pan where you cooked the broccoli.

In a small bowl, empty the 2 sachets of miso paste, 2 sachets of sesame oil and 1 sachet of sesame seeds from the noodle kit and mix with two large tablespoons of the ginger and onion oil which you prepared the night before. Add to the pan to sizzle and toss through the noodles. Add the broccoli back into the pan for a final stir-fry.

Finally serve with a sprinkle of sesame seeds from the kit  and enjoy.
