This is one of our favourite ways to enjoy our Katsu Curry Kit for something a little bit different. Just by adding a little extra veg stock you can transform our classic curry sauce into a tasty broth for noodle soup! Here we have topped our udon noodle soup with crispy Craft Tofu, but works just as well with chicken, fish or veggies.
Remove the tofu from the packaging and drain on a colander or sieve for 15 minutes.
In the mean time, cook the noodles according to packet instructions, drain, then rinse in cold water to stop the cooking.
Divide the noodles between 2 bowls and set aside.
To prepare the toppings, first, boil the eggs for 6-7 mins, then carefully remove from the boiling water and leave to cool.
Once drained, slice the tofu block widthways into 1cm wide slices.
Crack an egg into a bowl, and whisk thoroughly, before coating all sides of the tofu with it.
Next, pour out the panko breadcrumbs onto a tray and press the egg-coated tofu onto the bread crumbs on all sides until the tofu is fully coated.
In a frying pan, heat up 3 tablespoons of vegetable oil or sunflower oil and then fry each side of the tofu, flipping after 3-4 minutes. Be careful not to burn the breadcrumbs by keeping the heat low. Once cooked, lay the tofu onto paper towels to absorb any excess oils.
In a small saucepan, heat up 400mls of water and stir in the vegetable stock cube until fully dissolved.
Next stir in the Miso Tasty Katsu Curry Sauce to create the curry broth.
Turn off the heat and get ready to top your udon!
Finely slice the spring onions.
Deshell the egg and cut it in half lengthways.
Carefully pour the hot broth over the separate bowls of noodles until you see only the tops of the noodle in the bowl.
Assemble your bowls by arranging the crispy tofu, egg halves and spring onions.
