Katsu Curry Chicken Udon Noodle Soup Recipe

Enjoy your Katsu Curry Kit in a new way by replacing the rice with chewy soft noodles. This is quick and super warming lunch or dinner for curry lovers. Also great with crispy Tofu, Sweet potato, White Fish, or pork chop, that has been fried golden with panko breadcrumbs.

Ingredients
  

  • 1 Katsu Curry Kiit
  • 2 chicken fillets
  • 4 tbsp cooking oil
  • 400 g udon noodles
  • 1 raw egg whisked in a shallow bowl
  • 1 soft boiled egg halved
  • spring onions to garnish

Instructions
 

  • Pour the panko breadcrumbs into a bowl

  • Take the whole chicken fillet, but reduce the thickness by slicing in half lengthways if more than 1.5cm to ensure even cooking.

  • Dip the chicken into the whisked egg before coating all over in panko breadcrumbs

  • In a frying pan, heat up 4 tbsp of cooking oil and add the breaded chicken pieces. Fry on each side until cooked through and golden on both sides (about 4-5 minutes). Leave on a wire rack to rest.

  • In a saucepan, bring 400ml of water to a boil and cook the udon noodles for 3 minutes whilst gently loosen them as they cook.

  • Next, drain away the water using a sieve or a colander and rinse the noodles with cold water before separating them into two deep bowls.
  • Empty both packs of Miso Tasty Curry Sauce into a clean saucepan with 160ml of water and heat it up until bubbling hot stirring occasionally to make the curry broth.

  • Pour the curry broth over the cooked udon noodles in the bowls.
  • Slice the your breaded chicken into strips and place on top of your noodles.
  • Add one half of the egg in each bowl and garnish with spring onions before serving.

Notes

Try this recipe by swapping out the chicken with another meat of your choice. We recommend reducing the thickness by slicing in half lengthways if more than 1.5cm thick, to ensure even cooking . Always check that the meat is cooked through before serving. This recipe is also delicious with a fillet of fish.
Alternatively try with tofu or aubergine to make it vegetarian and vegan.
