Orange and miso are delightful together and especially with mackerel, cutting through its oiliness while bringing out its sweetness. Serve with a lightly dressed spinach salad and toasted seeds for a highly nutritious iron-rich starter, or with some bread for a light lunch. This dressing is also fantastic with other oily fish, such as tuna.
Serves 4 as a starter
- 4 tbsp white miso
- 1 tbsp mirin
- 2 tbsp orange juice, plus 1 heaped tsp finely grated orange zest
- 4 fillets of mackerel
Make the marinade by loosening the miso with the mirin and adding the orange juice and zest with 1 tbsp of water, stirring until smooth.
Coat the mackerel fillets on both sides with the marinade. Cover and leave for 20 minutes. Preheat the grill to medium.
Place the mackerel fillets under the grill, skin side up for 6 minutes, then skin side down for 2 minutes. The miso can catch and burn quite easily, so keep a close eye on it.
Serve with a salad dressed in olive oil and lemon juice.
TIP
Whizz up plain grilled mackerel with the orange miso marinade in a food processor for a zingy miso mackerel pâté. Serve on toasts as a canapé.
